Pancake Day, or Shrove Tuesday, is the traditional feast day before the start of Lent on Ash Wednesday. Lent – the 40 days leading up to Easter – was traditionally a time of fasting and on Shrove Tuesday, Anglo-Saxon Christians went to confession and were “shriven” (absolved from their sins). A bell would be rung to call people to confession. This came to be called the “Pancake Bell” and is still rung today.

So here are a couple of variations:
One traditional and one…
Well, a bit different…  Enjoy!

TRADITIONAL PANCAKES

Ingredients:

  • 250 g plain flour
  • 1/4 teaspoon of salt
  • 2 large eggs
  • 500 ml milk
  • Caster sugar (for sprinkling)
  • Fresh lemon (for squeezing)

So simple, you’ll have to try:

  1. Combine the flour and salt in a small mixing bowl. In a larger bowl, beat the milk and the eggs. Add flour mixture gradually, and beat till smooth and stir in melted butter.
  2. Heat a lightly oiled 18cm frying pan over medium high heat. Pour the pancake mixture onto the pan, approximately 30ml for each. Tip and rotate pan to spread the mixture as thinly as possible. Brown on both sides and serve hot topped with a sprinkling of sugar and squeeze of lemon juice.

FLOURLESS BANANA PANCAKES

PALEOPANCAKE

Ingredients:

  • 1 ½ large ripe bananas;
  • 2 eggs;
  • 2 ml. vanilla extract;
  • 1 ml. ground cinnamon;
  • 1 ml. baking powder;
  • Maple syrup; (optional)
  • Fresh fruits; (optional)

Directions:

  1. Crack the eggs in a bowl and whisk them.
  2. In another bowl, lightly mash the bananas with a potato masher or a fork.
  3. Add the egg, the baking powder,  the vanilla, and the cinnamon to the mashed bananas and stir to combine.
  4. Pour about 2 tablespoons of the batter at a time onto a skillet placed over a medium-low heat and cook until the bottom appears set (1 to 2 minutes). -1 Flip with a spatula and cook another minute.
  5. Serve immediately, topped with fresh fruit and maple syrup (if you like).
